Florida strawberries!

 

It's strawberry season in Florida and most come from Plant City and neighboring farming towns. The photos show the Vintage Baby Party collection I created for Mesa's first birthday and my Granny Smith's strawberry pie. Granny was my godmother and this is a tribute to her since she passed away just days before the birthday party in early February. The following is the easy recipe ... a good way to use up seasonal fruit and have a delicious dessert!

Granny Smith's Strawberry Pie

2 pints strawberries, cleaned and tops removed
1 pie shell, baked and cooled
1 small box strawberry Jello
1 cup sugar (or same of Splenda)
3 heaping tablespoons cornstarch
1 cup water

Fill baked pie shell with strawberries, ends of berries pointing upward. Mix 3/4 cup water, 1 cup sugar, and jello packet in saucepan and bring to boil. Dissolve cornstarch in 1/4 cup water and add to saucepan when boiling. Stir until thickened and take off heat. Let cool slightly and pour over berries in pie shell. Refrigerate at least two hours or overnight. Serve with whipped cream or cool whip, or all by itself. Enjoy!
